- coating
- 2 chicken breasts
- 2 1/2 tbsp cornflour
- 1/2 tsp baking powder
- 2 1/2 tsp salt
- black pepper
- bbq sauce
- 1 tbsp sweet chilli
- 2 tbsp hot sauce
- 3 tbsp ketchup
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp grated fresh ginger
- 2 chopped garlic cloves
- batter
- 60 g cornflour
- 25 g breadcrumbs
- 30 g plain flour
- 2 tbsp chilli flakes
- 1 tbsp salt
- 1 tbsp black onion seeds/onion powder
- 1/4 tsp baking powder
- 90 ml vodka
- vegetable oil (frying)
- 2 tbsp hot sauce
Instructions to make Korean Fried Chicken
- Coating- combine all ingredients bar chicken
- Add chicken, coat and set aside
- BBQ sauce- combine all ingredients in a small saucepan and simmer for 3 mins until slightly thickened and set aside
- For the chicken, place a large, wide, pan over a medium-high heat, fill with oil (at least 5cm deep) and heat
- Batter- Whisk together dry ingredients. In a small bowl, whisk together the hot sauce, vodka and 240ml water
- Just before you're ready to cook the chicken, whisk the wet ingredients into the dry ingredients and coat chicken
- Cook the chicken in 2 batches for 8-10 mins in the hot oil until crispy (turn about)
